I am still thinking it does not give me sufficient flexibility, but perhaps if I play around a little longer, there may be a solution.

I think it is an improvement Helen - it's much more eye-grabbing (I think the brown goes well with the blue sky etc as a contrast, and there's virtually no white space now to left and right.

Smart! :D

Another vote for the new one - it is more modern and easier to look at, a really nice colour scheme.

Looks like I'll be going with it then :D . Still a bit of work to be done with photos page, and I need to add a links and guestbook page too.

Looks great! The top image looks a bit over-compressed though. Maybe recrop and re-export this from the original?

Yes, the top image was a temporary solution, as I couldn't find the photo I wanted on my laptop to use.
As I've now signed up to a new hosting package, and am transferring my domain, things are becoming more critical to sort out. Current website is also template based, and I obviously will no longer have the hosting package after the start of May. I want to transfer my current site to another domain temporarily and point the one being transferred at it, but 1and1 have messed up their new control panel.

Still not completely finished, but I am so impressed so far. They've even embedded my online booking calendar onto the availability page.
I've still some work to do I think with keywords etc, although the majority of the text was just copied and pasted from the old one.
I've changed the header image too
Still got to sort out a guestbook, links and the photo gallery.
I feel like it's all been a bit rushed.

Hmm, a couple of months on, and the visit stats are way down on what I was getting with my old website. I transferred all the text and the majority of the photographs over from the other one, have used similar metatags and keywords. I've removed the LMH link to see how much real traffic I am getting, and I've reduced from around 900 visits per month to around 350. Is this simply because Google Analytics is more accurate than what I used before?
Advice required on how to improve the traffic.
