Lay My Hat

My daughter is driving from Madrid to Portugal next month in a Spanish hired car. Now that some of the tolls are electronic, how does she pay for these? Also, what is the situation regarding UK reg cars?
Last time we were there, 2 yrs ago, we managed to drive through without paying these tolls, because they have no way of tracing the registration.
