It's a bit further north than Beaune or Dijon, but Le Relais Bernard Loiseau in Saulieu is lovely and has a three-Michelin-star restaurant on the premises.

When people book more than a year in advance I usually offer to make the deposit refundable until the 1st of January of the year their reservation is in.
