Now, peaches and lemons are all very nice, but any suggestions for an excess of figs? Fig and pear jam has been suggested, or fig chutney, but neither quite appeal. Any better ideas?

Fig wine! Also, peach wine, lemon wine, orange wine..... these are great aperitifs in Provence.

Bottled figs in alcohol.
Also fig compote cooked with port and cinnamon , which then can be put in the freezer.

You can also "dry" your excess figs. I don't know how it's done, but the end product is delicious! I love to eat them with walnuts during winter.

According to my preserving book, to dry figs you just need to cut them in half and leave them out in the sun for a couple of days, taking them in at night if it is damp.

I assume you could also dry them slowly in the oven on a very low heat (I know you can do thi with tomatoes).
