An update and question...
We managed to get the original carpenter that fitted our windows to return late last year and adjust more to tilt. Over the window we left a number of tilt with outside shutters closed. Plus we purchase small dehumidifiers that collect water - they are not electric. Having arrived back at the villa after a 4 month break - the walls were not looking too bad.
There is the usual touching up and repairing some areas of broken plaster. Question - what do you use to repair cracked plaster in Italy? hubby has been using hard as nails but there must be something that is anti-muffa and will bond to the wall and dry like plaster. Any replied gratefully received.

You could try asking for some 'stucco antimuffa' or 'rasante antimuffa' at your local ferramenta o Brico centre.
