Touch wood, our pillows tend to stay pretty clean. At the moment I just have an inner pillow case and outer. But I do find that pillows can get a musty smell - I tend to chuck them in the tumble dryer with a perfume strip to freshen them up between guests.
I was wondering about pillow protectors and whether they stop pillows getting that musty smell?
Thanks for any thoughts / advice

If the pillows smell musty chuck them out and start again. Use pillow protectors (I use quilted ones from M&S) and give them a quick wash them at every changeover. They don't take long to dry.
