Does anyone know the name of the document one uses to officially register ones guests. I know it can be purchased from the stationers, but don't know its name, how many duplicates are on it, or how much it costs.

Yes, it's called a 'scheda di notifica'. A pad of 50 carbonated copies costs less than 5 euro.
